Genuine civet coffee (called weasel coffee in Vietnam due to translation oddities) is actually coffee
made from beans that have been consumed by a small forest-dwelling member of the mongoose family,
called a civet.
The civet is considered an annoyance by farmers, as they eat the
ripest cherries of the best coffee plants. As a result, coffee farmers typically discourage or
trap the civets, trying to keep them away from their coffee plants.
At one point in time, hunter-gatherers, who had followed the civets and collected the undigested
beans left behind, cleaned and roasted the beans and found that something miraculous had happened:
Enzymes in the civet's stomach broke down the bitter elements of the coffee and released as many
as 100 new flavor compounds! In short, the civets became
a partner in creating the world's rarest and most gourmet coffee, selling in specialty shops
for anywhere from $8.00 to $65.00 per cup!
However, in Vietnam, emphasis on coffee volume and consistency has driven the native civet population
to the brink of extinction. Vietnam never was a perfect habitat for the civets, who prefer a more
mountainous and heavily forested terrain, so the
net result is that civet coffee production in Vietnam has essentially faded away.
Fortunately, Trung Nguyen duplicated the enzyme soak process that morphs the coffee beans into super-beans,
and the product that they produced from this process is the world-famous Legendee. The Legendee
Gold duplicates the experience of an Arabica-based civet coffee, while the Legendee Classic
duplicates the experience of a mixed-species coffee (Arabica, Robusta, Excelsa, Liberica).
Trung Nguyen has been planning a natural civet farm-produced coffee to augment the Legendee, but
they have not been able to accomplish this task yet. For those who have been waiting, we proudly
present some fine civet coffees from other regions. If and when Trung Nguyen can bring about the
return of civet (weasel) coffee from Vietnam, you will see it here first!
We especially encourage our customers to try and compare the different Kopi Luwak coffees to each
other, and to the Legendee. It's a wonderful coffee journey that is only available on our website.

On our Sumatran civet farm, located in the Lampung province, civets dine on a fine strain of Arabica
Typica,
producing a bright and light-bodied brew, absolutely free of any bitterness, with a truly incredible
and persistent aftertaste. We have never experienced a coffee with such a delightful
aftertaste, drifting back into your awareness like a pleasant daydream and
taking you once again to coffee nirvana.
This was the first Kopi Luwak we tried, having brought some back
from a trip to the Philippines, and we fell in love with the fragrant
blend of Arabica, Excelsa and Liberica used to make Café (Coffee)
Alamid. One of the most respected Kopi Luwaks in the world, Arengga's
Coffee Alamid is "harvested" weekly from 20 independent
gatherers from high-altitude forests. It is a medium roast, and it
comes vacuum-sealed in a 100 gram bottle that makes an excellent gift.
There is an attractive scroll that comes with every bottle explaining
the heritage of the coffee and providing brewing tips. When you first
open the Coffee Alamid, the aroma is truly astounding, one of the
world's great coffee experiences. 100 grams (3.5 ounces)
Liberica is a vanishing species of coffee that is only now being brought
back from the brink of extinction. Its almond-shaped beans have an exceptional
aroma, almost floral and fruity, while its flavor is full and slightly earthy.
Kopi Luwak Liberica is a great way to enjoy Liberica because the Luwak process
brings out even more of the rich, full body of the Liberica. Comes with a scroll telling
the story of the coffee and the company that produced it.
This environmentally and ethically sound coffee comes from the
Julia Campbell Agro-Forest Memorial Park in the Philippines. The park shelters the rare Philippines
civet and is also home to the native people who live in communion with the civets and their forest.
The Robusta trees grow in shade at an unusually high altitude, a unique growing method for Robusta
that produces extremely smooth and luxurious coffee with hints of almond, spice and fruit.

The justifiably famous Legendee Gold is Trung Nguyen's unique simulated
Kopi Luwak coffee: The enzymes involved in the Luwak digestion process are replicated
in a lab, and the beans are given a natural enzyme soak to release the hidden flavors that make
Kopi Luwak so special. It's not exactly identical, but it's very similar, especially to
Arabica-Excelsa blends like our Sumatran. It's an excellent choice for anyone who's not
quite sure about drinking genuine Kopi Luwak, delivering the smooth body and signature

Classic Whole Bean Legendee
It's back! We're proud to announce the triumphant return
of the original Legendee Whole Bean. This blend features a higher percentage
of peaberries and Robusta, with correspondingly darker flavor that ices
exceptionally well. This blend is more similar to a blended or Robusta-based
Kopi Luwak, such as Bantai.
